Recipe #11 – caramelised onions

Caramelised onions are (according to the book) Stephanie Alexander’s favourite way to eat an onion. And who could blame her. Apart from having to peel 20 small onions, this dish is a doddle – put the onions on, give them a stir every now and then and enjoy tasty tasty onions over the next few days. These onions in particular are destined to find themselves on top of an onion and blue cheese pizza over the next couple of days.
